CENTRAL
In our space, we interpret the complexity of the Peruvian territory through immersions and tastings that celebrate the diversity and altitudinal irregularity of the country. In close connection with Mater, and in collaboration with local communities, artists and researchers, we explore ingredients in their natural context, learning from local knowledge and documenting their connection with ecosystems.
Central is a constantly evolving proposal.
Mater is our research and interconnection center, and its purpose is to explore, document, and make visible the megadiversity of the territory. Under the leadership of Malena Martínez, Virgilio Martínez and Pía León, it serves as the bridge between the biological and cultural plurality of the country and gastronomy as its main platform for exposure.
Mater continues to expand its lines of action, now focused on projects in the areas of Humanities, Art & Culture, Academia and Culinary Ideas & Applications. According to the nature of each project, external collaborators join in to expand the integral and inclusive vision that characterizes the interdisciplinary management of Mater.
All the knowledge base and evidence is expressed in the restaurants Central, Kjolle, and MIL in Peru, as well as in MAZ in Tokyo, spaces to experiment and to make information accessible.
